A culture is defined as much by its food, as by its architecture, its parks, its people. I find I learn so much about a city by how it feeds its own cittadini as its visitors. For example, when I first visited Amsterdam, it seemed to me (at the time anyway – way back in the 90’s – you know, the 20th Century) that everything had a hard-boiled egg on it. At the side of the plate, on the sandwiches, or of course, just all by its “incredible, edible egg” self.
